Panis Angelorum is made with the Albillo Real variety, a variety with an oxidative character, therefore, the harvest must be carried out at night to preserve the low temperature of the grapes, in order to avoid oxidation and preserve the aromatic characteristics of this variety. Once the grapes enter the winery, a detailed selection is made. Afterwards, it goes through a pre-fermentative maceration for 48 hours with its skins; it is pressed, and then the must is fermented for approximately 15 to 20 days. In the aging of this wine, we use 500-litre barrels and it remains on the lees for 6 months, with batonage every week.
